recipes: spaghetti squash



This is one of my all-time favourite recipes. It's so easy to make and it's a super healthy alternative to heavy pasta that we all love.


ingredients:
1 medium/large spaghetti squash
1 large tomato, chopped
1 zucchini, chopped
1/4 cup diced onion
1 cup chopped mushrooms
1.5 cups tomato sauce

1. Cut open the spaghetti squash into quarters and clean out seeds (similar to how you clean a pumpkin), then fill a glass pan 3/4 with water and place the spaghetti squash with the inside facing down. Microwave for 5-10 minutes until soft.
2. Using a fork, remove the squash from the skin. It will fall away naturally into a noodle shape as pictured.
3. Saute veggies until soft, then combine with the spaghetti squash and tomato sauce. 
4. Garnish and enjoy!

I admit at my last tasting of spaghetti squash as pasta I was not a huge fun, but this recipe looks so beautiful and fresh that I might just have to give it another go!
