carrot ribbon and tofu salad



Carrot ribbons are my favourite new thing to include in salads, ever since a friend introduced me to them. They are kind of amazing! 

1 carrot, peeled
1/3 cup steamed cauliflower
1 green onion, chopped
1/3 cup chopped tomato
cubed tofu
cilantro
5 almonds chopped

dressing:
1/2 lime juice
drizzle of avocado oil or olive oil
salt & pepper to taste

I love carrot ribbons as well! They are much easier to eat this way and less over powering. Sounds delicious :)

Makes for such a pretty dish as well! I've been looking for some lighter meals - this looks perfect!
